Ingredients
  

For the Chicken
  • 1 pound chicken breasts cubed
  • 2 tablespoons olive oil can be replaced with avocado oil
  • 1 teaspoon smoked paprika or regular paprika for less smoke
  • 1 teaspoon ground cumin or coriander for a lighter taste
  • 1 teaspoon garlic powder or fresh minced garlic
  • 1 teaspoon onion powder can use fresh onion
  • to taste salt
  • to taste black pepper
For the Feta Sauce
  • 4 ounces feta cheese or dairy-free feta for vegan option
  • 1 cup Greek yogurt or plant-based yogurt
  • 2 tablespoons fresh lemon juice fresh is best
For the Veggies and Garnish
  • 1 cup cherry tomatoes
  • 1 cup cucumber sliced
  • 1 medium red onion diced
  • to taste fresh parsley or dill for garnish
  • 1/2 cup kalamata olives optional

Method
 

Preparation
  1. In a large bowl, combine the cubed chicken breasts with olive oil, smoked paprika, ground cumin, garlic powder, onion powder, salt, and black pepper. Toss well to ensure even coating. Let marinate for 15 minutes if possible.
  2. Heat a non-stick skillet over medium-high heat. Add the marinated chicken in a single layer and sauté for 6-8 minutes until golden brown and cooked through. Transfer to a plate.
  3. In a blender, combine feta cheese, Greek yogurt, lemon juice, garlic powder, and a drizzle of olive oil. Blend until smooth, adding water if too thick. Adjust seasoning.
  4. Prepare serving bowls with a scoop of rice or quinoa, layer sautéed chicken, cherry tomatoes, cucumber, and red onion. Drizzle with feta sauce.
  5. Garnish with parsley or dill and optional olives. Serve immediately.
