Step-by-Step Instructions
- Preheat your oven to 375°F (190°C). Gather all your ingredients and prepped equipment.
- In a large pot, bring salted water to a rolling boil. Add the orzo pasta and cook it just 2 minutes less than the package instructions. Drain and rinse under cold water.
- In your oven-safe skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until softened.
- Stir in fresh spinach and cook for another 2 minutes until it wilts. Season with salt and pepper.
- Remove skillet from heat and mix in the cooked orzo, Boursin cheese, Parmesan, mozzarella, and broth until well combined.
- Transfer the mixture into a greased baking dish and sprinkle reserved Parmesan on top. Cover tightly with aluminum foil.
- Bake for 25 minutes, then remove foil and bake for another 10-15 minutes until golden and bubbly.
- Allow to rest for about 5 minutes before serving. Garnish with fresh basil.
