Method

Preparation Steps
  1. Begin by placing the boneless, skinless chicken breasts in the bottom of your crockpot. Add the diced onions, sliced carrots, celery (if using), and minced garlic on top of the chicken.
  2. Pour the chicken broth and cream of chicken soup into the crockpot, ensuring the chicken and vegetables are well coated. Season with dried thyme, dried parsley, salt, and pepper.
  3. Secure the lid on the crockpot and set it to cook on low for 6-7 hours or high for 3-4 hours.
  4. About halfway through, check the chicken's progress. Once the chicken is fully cooked, shred it into bite-sized pieces.
  5. In a large mixing bowl, combine the all-purpose flour, baking powder, and a pinch of salt. Stir in the milk and melted butter until just combined.
  6. Drop dollops of the dumpling batter into the hot chicken mixture. Cover and set it to high for 30-40 minutes.
  7. Check the dumplings' doneness by inserting a toothpick into the center; it should come out clean.
