For the Topping
  • 1/2 cup Bacon Bits Turkey bacon can offer a lighter alternative.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x9-inch baking dish.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, ketchup, egg, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently until just combined.
  3. Press the meat mixture evenly into the prepared baking dish, forming a base about 1 inch thick.
  4. Bake for 25-30 minutes until the internal temperature reaches 160°F (71°C).
  5. Peel and chop potatoes into chunks, boil in salted water until fork-tender (about 15-20 minutes), then mash with sour cream and shredded cheddar cheese until creamy.
  6. Spread the creamy mashed potatoes over the cooked meatloaf, then sprinkle with bacon and green onions.
  7. Return to oven for 10-15 minutes until heated through and golden on top. Optionally broil for 2-3 minutes for extra crispness.
  8. Let the casserole rest for about 5 minutes before serving.
