Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a 9x9-inch baking dish.
- In a large mixing bowl, combine the ground beef, breadcrumbs, ketchup, egg, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently until just combined.
- Press the meat mixture evenly into the prepared baking dish, forming a base about 1 inch thick.
- Bake for 25-30 minutes until the internal temperature reaches 160°F (71°C).
- Peel and chop potatoes into chunks, boil in salted water until fork-tender (about 15-20 minutes), then mash with sour cream and shredded cheddar cheese until creamy.
- Spread the creamy mashed potatoes over the cooked meatloaf, then sprinkle with bacon and green onions.
- Return to oven for 10-15 minutes until heated through and golden on top. Optionally broil for 2-3 minutes for extra crispness.
- Let the casserole rest for about 5 minutes before serving.
