Method
 

Cooking Instructions
  1. Cook linguine in salted boiling water for 8–10 minutes until al dente. Reserve 1 cup pasta water, then drain and set aside.
  2. In a skillet, heat olive oil and butter over medium heat. Sauté garlic, ginger, and red chili for 1 minute until fragrant.
  3. Add prawns, curry powder, and turmeric. Cook for 2–3 minutes until prawns turn pink.
  4. Pour in coconut milk, fish sauce, and lime juice. Simmer for 5–7 minutes until sauce thickens.
  5. Add drained linguine to the sauce, toss to coat, and add reserved pasta water to adjust consistency.
  6. Season with salt and pepper. Serve garnished with coriander and lime wedges.
