  • 1/2 cup Pecorino Romano Cheese
  • 1 tsp Freshly Cracked Black Pepper
  • 1/2 cup Reserved Pasta Water

Method
 

Step-by-Step Instructions
  1. Fill a large pot with water, add salt, and bring it to a rolling boil.
  2. Add the spaghetti to the boiling water and cook according to package directions until al dente.
  3. In a mixing bowl, whisk together the eggs, Parmesan, and Pecorino Romano cheeses until smooth.
  4. Heat a skillet over medium heat and add the diced bacon. Cook for about 5-7 minutes until crispy.
  5. Drain the spaghetti and add it to the skillet with the bacon, tossing to coat in the fat.
  6. Pour the egg and cheese mixture over the spaghetti and toss continuously to coat.
  7. Adjust the sauce consistency with reserved pasta water until desired creaminess is reached.
  8. Season with black pepper and garnish with extra cheese before serving.
