- Preheat your oven to 350°F (175°C). Grease a 4x8 inch loaf pan.
- Mash three ripe bananas until smooth. Stir in melted butter until well-blended.
- Add sugar and a beaten egg to the banana mixture along with vanilla extract. Mix until just combined.
- Fold in baking soda and pinch of salt, then gently mix in flour until no dry flour remains.
- Mix cinnamon and sugar together in a small bowl for the swirl topping.
- Pour half of the batter into the loaf pan and smooth it out.
- Sprinkle three-quarters of the cinnamon-sugar mixture over the first layer of batter.
- Pour the remaining batter on top and gently spread it out.
- Using a knife, gently swirl through the layers of batter to create a marbled effect.
- Sprinkle the remaining cinnamon-sugar mixture over the top of the batter.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Remove from oven and cool in the pan for 15 minutes before transferring to a wire rack.
