  • 1 cup Evaporated Milk Whole milk plus a tablespoon of cream works too

  • 2 cups Rice Quinoa can be used as a substitute

Preparation Steps
  1. In a blender, combine the Ají Amarillo paste, olive oil, and minced garlic. Blend until smooth to create the marinade.
  2. Place chicken thighs in a bowl or bag, pour marinade over, ensuring well-coated. Marinate for at least 15 minutes.
  3. Preheat grill or skillet over medium-high heat. Cook chicken for 6-7 minutes per side until golden brown.
  4. In a saucepan, combine remaining marinade with evaporated milk and simmer for 5-7 minutes until slightly thickened.
  5. Remove cooked chicken from heat, let rest, then slice and serve over rice, drizzling sauce on top.
  6. Consider serving in warm tortillas or with fried plantains for added flavor.
