Ingredients

  • 1 can Chickpeas drained and rinsed
  • 2 pcs Avocados diced, toss with lemon juice
  • 1 cup Feta Cheese crumbled
  • 1 small Red Onion chopped
  • 1 cup Fresh Parsley chopped
  • 1/4 cup Fresh Mint chopped
For the Dressing
  • 3 tbsp Olive Oil or avocado oil
  • 1 pcs Lemon Juice freshly squeezed
  • 1 clove Garlic minced
  • 1 tsp Dried Oregano or Italian seasoning
  • Salt to taste
  • Pepper to taste

Method
 

Preparation
  1. Drain and rinse the chickpeas thoroughly under cold water.
  2. Dice the avocados and chop the red onion, parsley, and mint.
Combining Ingredients
  1. In a large mixing bowl, combine the chickpeas, diced avocados, feta cheese, red onion, and chopped herbs. Toss gently.
Making the Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, and oregano. Season with salt and pepper.
Dressing the Salad
  1. Drizzle the dressing over the salad and toss gently without mashing the avocado.
Serving
  1. Serve immediately or chill for 15-30 minutes.
