Preparation Steps
- Preheat your oven to 375°F (190°C) and grease a 9x9-inch baking dish.
- In a large mixing bowl, combine the ground beef, breadcrumbs, egg, milk, chopped onion, garlic powder, salt, pepper, Worcestershire sauce, and half of the ketchup. Mix gently.
- Transfer the meat mixture to the greased baking dish, pressing it down evenly. Spread the remaining ketchup over the top.
- Bake for 20 to 25 minutes until the meatloaf is cooked through and there’s no pink remaining inside.
- Remove from the oven and spread the mashed potatoes evenly across the top of the meat layer.
- Sprinkle shredded cheddar cheese and crispy bacon over the mashed potatoes.
- Return to the oven and bake for an additional 10 to 15 minutes until the cheese is melted and bubbly.
- Cool slightly, garnish with chopped green onions or chives, and then serve.
