Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and grease a 9x9-inch baking dish.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, milk, chopped onion, garlic powder, salt, pepper, Worcestershire sauce, and half of the ketchup. Mix gently.
  3. Transfer the meat mixture to the greased baking dish, pressing it down evenly. Spread the remaining ketchup over the top.
  4. Bake for 20 to 25 minutes until the meatloaf is cooked through and there’s no pink remaining inside.
  5. Remove from the oven and spread the mashed potatoes evenly across the top of the meat layer.
  6. Sprinkle shredded cheddar cheese and crispy bacon over the mashed potatoes.
  7. Return to the oven and bake for an additional 10 to 15 minutes until the cheese is melted and bubbly.
  8. Cool slightly, garnish with chopped green onions or chives, and then serve.
