Ingredients
  

For the Salad
  • 4 cups Fresh Broccoli Florets Thawed frozen broccoli can be used but should be dried
  • 2 cups Sweet Apples Honeycrisp or Gala varieties recommended
  • 1 cup Shredded Carrots Optional
  • 1 cup Dried Cranberries Can substitute with raisins or other dried fruits
  • 1/2 cup Sunflower Seeds Pecans or almonds can be used as alternatives
  • 1/4 cup Red Onion Soak in cold water to mellow flavor if desired
  • 1 cup Cheddar Cheese Optional; feta or goat cheese can be used
For the Dressing
  • 1 cup Greek Yogurt May substitute with mayo or half and half
  • 1/4 cup Apple Cider Vinegar
  • 2 tablespoons Honey or Maple Syrup Adjust to taste
  • 1 tablespoon Dijon Mustard

Method
 

Preparation
  1. Wash and dry the fresh broccoli, chop it into bite-sized pieces, and set aside.
  2. Dice the apples and toss them in lemon juice to prevent browning.
  3. In a large bowl, combine broccoli, apples, and shredded carrots if using.
  4. Add dried cranberries, sunflower seeds or pecans, and chopped red onion.
  5. Include cheddar cheese if desired.
Dressing
  1. In a small bowl, whisk together Greek yogurt, apple cider vinegar, honey or maple syrup, and Dijon mustard until smooth.
  2. Adjust sweetness or tanginess as needed with salt and pepper.
Combine
  1. Pour dressing over salad ingredients and toss gently until well coated.
  2. Cover and refrigerate for at least 30 minutes before serving.
Serving
  1. Give the salad a good stir before serving and top with extra sunflower seeds or cheese.

Notes
