  • 1 large Avocado ripe
  • 2 cups Fresh Spinach thawed frozen spinach works well
  • 1 cup Herbs (Basil & Dill) use preferred fresh herbs
  • 2 cloves Garlic adjust based on taste preference
  • 2 stalks Green Onions can substitute with shallots
  • 1 cup Chickpeas optional but recommended
For the Dressing
  • 2 tbsp White Wine Vinegar can substitute with apple cider vinegar
  • 2 tbsp Nutritional Yeast can be omitted or replaced with vegan parmesan
  • 3 tbsp Olive Oil use high quality

Method
 

Step-By-Step Instructions
  1. Start by bringing a large pot of salted water to a rolling boil over high heat. Add your pasta and cook according to package instructions, usually around 8-10 minutes, until al dente. Drain the cooked pasta in a colander.
  2. Return the drained pasta to the pot, drizzle with a tablespoon of olive oil to prevent sticking, and cool quickly by adding ice cubes or running under cold water.
  3. While the pasta cools, prepare the dressing by blending avocado, fresh herbs, garlic, white wine vinegar, nutritional yeast, and salt until smooth.
  4. Once the pasta has cooled, transfer it to a mixing bowl. Add chickpeas, spinach, and any additional chopped vegetables. Drizzle with the dressing and toss until evenly coated.
  5. Slice green onions and sprinkle over the salad. Serve immediately or chill briefly to enhance freshness.
