For the Topping
  • 1/4 cup Crumbled Granola Use any granola that's low in added sugars.

Equipment

  • mixing bowl
  • small saucepan
  • refrigerator

Method

Preparation Steps
  1. In a medium mixing bowl, combine old-fashioned rolled oats with your preferred plant-based milk, coconut yogurt, chia seeds, maple syrup, lemon zest, and vanilla extract. Stir thoroughly until all ingredients are well mixed.
  2. Cover the bowl with plastic wrap or a lid, and place it in the refrigerator for at least 6 hours or overnight.
  3. The next morning, prepare the blueberry compote by adding fresh blueberries, a sprinkle of chia seeds, maple syrup, lemon juice, and a drizzle of vanilla extract into a small saucepan. Cook this mixture over medium heat for about 5-7 minutes, stirring occasionally until it thickens.
  4. Once your Blueberry Pie Overnight Oats have soaked and the compote is ready, spoon the creamy oats into bowls, layer on the thick blueberry compote, and sprinkle crumbled granola on top.
