- Preheat your oven to 350°F (180°C) and grease a 9"x13" baking dish with coconut oil.
- In a medium bowl, combine quick-cooking oats, oat milk, and boiling water. Let it sit for about 10 minutes to soak.
- Mash a ripe banana in a large mixing bowl. Whisk in egg, maple syrup, melted coconut oil, and vanilla extract.
- Fold the soaked oat mixture into the banana mixture and stir in fresh blueberries gently.
- Pour the mixture into the baking dish, top with remaining blueberries and sprinkle with coconut or brown sugar if desired.
