  • 2 cups Fresh Blueberries can use frozen blueberries

Step-by-Step Instructions
  1. Preheat your oven to 350°F (180°C) and grease a 9"x13" baking dish with coconut oil.
  2. In a medium bowl, combine quick-cooking oats, oat milk, and boiling water. Let it sit for about 10 minutes to soak.
  3. Mash a ripe banana in a large mixing bowl. Whisk in egg, maple syrup, melted coconut oil, and vanilla extract.
  4. Fold the soaked oat mixture into the banana mixture and stir in fresh blueberries gently.
  5. Pour the mixture into the baking dish, top with remaining blueberries and sprinkle with coconut or brown sugar if desired.
  6. Bake for 35-40 minutes until golden brown and puffy.
  7. Allow to cool slightly before serving; can serve with nut butter or additional fruit if desired.
