Ingredients
  

For the Filling
  • 1 lb Ground Beef can substitute with ground turkey or pork
  • 1 cup Rice short-grain, preferably Arborio, or quinoa for gluten-free
  • 3 cloves Garlic minced
  • 1 medium Onion diced
  • 1 tbsp Paprika smoked is optional for extra flavor
  • to taste Salt
  • to taste Pepper
For the Peppers
  • 4 Bell Peppers sweet red or yellow preferred
  • 2 medium Tomatoes skinned and diced
For the Sauce
  • 1 cup Tomato Sauce homemade is best
  • 1 tsp Sugar to balance acidity
  • 2 tbsp Parsley chopped, optional

  • to taste Sour Cream or Greek yogurt
  • to taste Cheese shredded, for topping

Method
 

Preparation Steps
  1. Preheat the oven to 440°F (225°C). Spread diced tomatoes at the bottom of the baking pan, then add minced garlic and diced onion.
  2. Heat oil in a skillet over medium heat. Sauté garlic and onion for 3-5 minutes until translucent.
  3. Add ground beef, paprika, salt, and pepper; cook until beef is halfway browned, stirring frequently.
  4. Cook rice in boiling water for about 10 minutes until just partially done.
  5. Combine beef and rice in the skillet, mix thoroughly, and let sit for flavors to meld.
  6. Hollow out the bell peppers, fill them generously with the beef and rice mixture, and place in the baking pan.
  7. Mix tomato sauce, sugar, and parsley in a bowl; pour over the stuffed peppers in the baking pan.
  8. Cover with aluminum foil and bake for 60-75 minutes, turning halfway through for even cooking.
