Method
 

Preparation
  1. Begin by cutting the chicken breast into uniform 1-inch cubes and pat them dry with paper towels.
  2. In a large mixing bowl, combine the chicken cubes with olive oil, garlic powder, paprika, salt, and pepper. Toss well.
  3. Soak wooden skewers in water for about 30 minutes. Thread 4-5 chicken pieces onto each skewer.
  4. Whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth.
  5. Cook the skewers on a preheated grill for 5-6 minutes per side or bake at 425°F for 10-12 minutes.
  6. Transfer skewers to a serving platter, drizzle with reserved sauce, and garnish with green onions, sesame seeds, and cilantro.
