Ingredients
  

For the Potatoes
  • 1 kg Yukon Gold Potatoes
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tsp Salt adjust to taste
  • 1/2 tsp Black Pepper freshly ground
  • 1/2 tsp Red Chilli Flakes adjust to spice preference
For the Feta and Flavor
  • 200 g Feta Cheese can substitute with goat cheese
  • 1 tsp Dried Thyme or fresh if available
  • 1 tsp Dried Oregano or Italian seasoning
  • 1 head Garlic cut head
  • 1 whole Lemon quartered
  • 1 tbsp Honey or maple syrup for vegan
  • 1/4 cup Fresh Basil chopped

Method
 

Preparation Steps
  1. Preheat your oven to 200°C (390°F).
  2. Wash and cube the potatoes, then par-boil them for 6-8 minutes. Drain and let them dry.
  3. In a baking dish, mix the par-boiled potatoes with olive oil, thyme, oregano, salt, and pepper.
  4. Roast the potatoes in the oven for 30-40 minutes, turning occasionally until golden brown.
  5. Create a space in the roasted potatoes, place the feta block there, and surround it with garlic cloves. Drizzle lemon juice over the feta.
  6. Return to the oven and roast for another 15 minutes until the feta is soft.
  7. Squeeze the roasted garlic into a bowl, mash it, and mix with remaining lemon juice and basil. Stir into potatoes.
  8. Drizzle honey over the dish and garnish with fresh basil before serving.
