Preparation Steps
- Preheat your oven to 200°C (390°F).
- Wash and cube the potatoes, then par-boil them for 6-8 minutes. Drain and let them dry.
- In a baking dish, mix the par-boiled potatoes with olive oil, thyme, oregano, salt, and pepper.
- Roast the potatoes in the oven for 30-40 minutes, turning occasionally until golden brown.
- Create a space in the roasted potatoes, place the feta block there, and surround it with garlic cloves. Drizzle lemon juice over the feta.
- Return to the oven and roast for another 15 minutes until the feta is soft.
- Squeeze the roasted garlic into a bowl, mash it, and mix with remaining lemon juice and basil. Stir into potatoes.
- Drizzle honey over the dish and garnish with fresh basil before serving.
