For the Filling
  • 2 cups Dried Apricots can substitute with figs or cherries
  • 0.5 cups Water
  • 2 tablespoons Fresh Lemon Juice
  • 0.5 teaspoon Almond Extract optional

Step-by-Step Instructions
  1. Prepare the apricot filling by simmering chopped dried apricots, water, and sugar until tender.
  2. Preheat your oven to 375°F (190°C) and prepare a baking pan.
  3. Mix the dry ingredients: flour, sugar, baking powder, and salt.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Combine wet ingredients: beaten egg and vanilla, then mix into the dry ingredients.
  6. Press the dough into the bottom of the baking pan, saving some for the topping.
  7. Spread the cooled apricot filling over the crust.
  8. Crumble the reserved dough over the filling.
  9. Bake for 30-35 minutes until golden. Cool completely before cutting into squares.
