Prepare the Pie
- Preheat your oven to 375°F (190°C). Bake the pie crust for about 15–20 minutes until golden brown. Allow to cool.
- In a bowl, mix 1/2 cup creamy peanut butter and 1/2 cup powdered sugar until crumbly. Set aside.
- In a saucepan, whisk together 3/4 cup granulated sugar, 1/4 cup cornstarch, 1/4 teaspoon salt, and 3 cups of whole milk. Cook over medium heat until thickened.
- Beat 3 egg yolks until pale. Gradually mix with hot milk, then return to saucepan and cook for an additional 2-3 minutes.
- Remove from heat and stir in 1/2 cup peanut butter and 1 teaspoon vanilla until smooth.
- Layer peanut butter crumbles in the cooled pie crust, pour custard over it, cover with plastic wrap, and chill for at least 4 hours.
- When ready to serve, whip 1 cup heavy cream until soft peaks form, add powdered sugar and vanilla, then spread over pie.
- Sprinkle remaining peanut butter crumbles on top, slice, and enjoy.
