Preparation
- Wash zucchini and yellow squash thoroughly under cool water. Slice both into uniform rounds, approximately half an inch thick.
- In a large bowl, combine zucchini, yellow squash, minced garlic, olive oil, salt, and pepper. Toss until evenly coated.
- Preheat air fryer to 400°F (200°C) for about 5 minutes.
- Place seasoned vegetables in the air fryer basket in a single layer. Cook for 10 to 15 minutes, shaking the basket halfway through.
- Check for tenderness and golden-brown color after 10-15 minutes. Cook longer if needed.
