Preparation
- Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper.
- In a medium bowl, combine streusel ingredients. Mix until the texture resembles coarse crumbs.
- Dissolve coffee granules in ½ cup of boiling water. Allow to cool.
- In a large mixing bowl, whisk together flour, granulated sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together sour cream, vegetable oil, egg, and cooled coffee mixture.
- Gently fold the wet mixture into the dry ingredients using a spatula until just combined.
- Spread half of the batter into the prepared pan, sprinkle with half of the reserved streusel, and dollop remaining batter on top.
- Sprinkle the remaining streusel on top.
- Bake for 35-40 minutes, or until golden brown and a toothpick comes out clean.
- Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- In a small bowl, whisk together powdered sugar and coffee until smooth. Drizzle over the cooled cake.
