Ingredients
  

For the Pasta
  • 1 lb Pasta spaghetti or penne can be used
For the Sauce
  • 1 tablespoon Extra Virgin Olive Oil for sautéing
  • 0.5 Yellow Onion diced
  • 3-4 cloves Garlic minced
  • 15 oz Diced Tomatoes can use fresh tomatoes
  • 1 tablespoon Tomato Paste can replace with extra diced tomatoes
  • 2 tablespoons Red Wine or Red Wine Vinegar substitute with broth for non-alcoholic
  • 1 tablespoon Fresh Lemon Juice or vinegar
  • 2 tablespoons Capers roughly minced
  • 0.5 cup Castelvetrano Olives roughly chopped
  • 2 teaspoons Italian Seasoning
For the Protein
  • 5 oz Canned Tuna in Olive Oil
For the Heat
  • Crushed Red Pepper Flakes to taste
For the Garnish
  • Parsley
  • Parmesan Cheese omit for dairy-free

Method
 

Cooking Instructions
  1. Boil a large pot of salted water, add pasta and cook until al dente, about 8-10 minutes. Reserve ¼ cup of pasta water, then drain.
  2. In a skillet, heat olive oil over medium-high heat. Sauté onions until translucent, about 3-4 minutes.
  3. Add garlic and cook for about 30 seconds until fragrant; do not burn.
  4. Stir in tomato paste and cook for an additional 30 seconds.
  5. Pour in red wine or vinegar, simmer for 1-2 minutes.
  6. Mix in diced tomatoes, Italian seasoning, olives, capers, and lemon juice. Simmer for 8-10 minutes.
  7. Fold in tuna and reserved pasta, stir to combine and heat through for 1 minute.
  8. Taste and season with salt and pepper. Serve garnished with parsley and Parmesan.
