- Boil a large pot of salted water, add pasta and cook until al dente, about 8-10 minutes. Reserve ¼ cup of pasta water, then drain.
- In a skillet, heat olive oil over medium-high heat. Sauté onions until translucent, about 3-4 minutes.
- Add garlic and cook for about 30 seconds until fragrant; do not burn.
- Stir in tomato paste and cook for an additional 30 seconds.
- Pour in red wine or vinegar, simmer for 1-2 minutes.
- Mix in diced tomatoes, Italian seasoning, olives, capers, and lemon juice. Simmer for 8-10 minutes.
- Fold in tuna and reserved pasta, stir to combine and heat through for 1 minute.
- Taste and season with salt and pepper. Serve garnished with parsley and Parmesan.
